Meanwhile, the activity of about 70 raisin processing and packaging units with a production capacity of more than 80,000 tons, for many years has been able to preserve the name of Malayer in exports and export the raisin brand of the grape world in more than 20 countries, a brand that many raisin competitors today use the Malayer brand and name on their products to enter the competitive world markets and export.
The best type of export raisin is obtained from grapes that have reached 80% and its color should look as uniform as possible. Another important factor in the quality of raisins for export is the lower number of raisins with tail, unripe, small, crushed and sugared, compared to the number of healthy raisins in a certain amount, which is directly related to the process of cleaning raisins.
Iran’s Raisin position in the World
Iran is currently the third largest exporter of raisins in the world, with Turkey and the United States ranking first and second in the world, with Turkey, Iran, Greece, Italy and Chile accounting for more than 80% of the world’s raisin exports.
On the other hand, most of the raisins in the world are imported from the UAE, Russia, Ukraine, Germany, Egypt, Canada, Pakistan, Turkey, Spain and Kuwait.
Iran’s share of raisin exports is about 27% of world exports. More than $ 250 million is generated annually from this source of income.
Methods for producing raisins for export
Raisins are mainly prepared by two general traditional and industrial methods.
In the traditional method, grape seeds are placed in large trays and exposed to direct sunlight.
The industrial form involves immersing the grapes in Tizab or using sulfur vapor and other ingredients to make raisins for export.
Due to the caramelization of the sugar in the grapes, raisins obtained in the traditional way are usually darker in color than the original grapes. However, if the industrial method is used to prepare raisins, due to the use of sulfur gas, the color of raisins will be golden and more colorful.

Sulfur smoke is used to dry this type of raisin for export, and golden raisins are sold in amber yellow and light brown colors.
In our country, the most famous raisin is the same type of green raisin that is used as a snack and in nuts. Green raisins are the result of drying grained, tall and elongated grapes using sulfur.
Maviz or seedless raisins are obtained from Shahani grapes and are smaller and darker in color than ordinary raisins and have a sharper taste.

Transformation of grapes into raisins increases the concentration of phenolic compounds in this fruit and increases its cancer prevention and treatment properties. These phenolic compounds include quinic acid, garlic, chlorogenic, caffeic acid, catechins and epicatechins. Also, contrary to what may seem at first, golden raisins have more nutrients than traditional raisins.
